From the age of seven, Pascal Barbot knew he wanted to be a chef. Raised in the small town of Auvergne in central France, he spent time harvesting vegetables in his father’s garden and watching his parents prepare traditional regional cuisine.
As a young culinary student and an avid traveler, Barbot began his hands-on education at some of the top restaurants in Europe and Australia. His early training included stints at Maxim’s in Paris, Clave in Claremont-Ferrand, Les Saveurs in London, and Troisgros in Roanne. He then worked with mentor Chef Alain Passard at L’Arpège, who, over the course of a five-year working relationship, taught him to respect the most basic of products. It was during that time that he met Christophe Rohat, with whom he partnered to open Astrance in July of 2000. Astrance turned out to be a culinary force in the Parisian restaurant scene receiving its first Michelin star after only one year, the second star in 2005, and the third in 2007. After a long wait (longer than The Ledbury’s!), L’Astrance is back in its new form and location. Pascal Barbot’s food is as good as ever, and with a larger and better equipped kitchen, his creative side is sure to shine.
French gastronomy is known for its slow progression, but in recent years, a new generation of innovative chefs has emerged to shake things up. The likes of Barbot, David Toutain, and Christophe Pelé are now taking the lead from legendary chefs such as Alain Passard, Pierre Gagnaire, and Michel Bras. Among these new pioneers, L’Astrance has maintained its position as one of the top establishments for over two decades. With its recent move to the former location of Robuchon’s Jamin, the restaurant aims to reach even greater heights.

Pascal Barbot (born 7 June 1972) is a French chef. His restaurant L'Astrance in Paris earned one Michelin star 2023, a year after the reopening of the restaurant at a new location, and has kept the star ever since. Previously L'Astrance had three stars from 2007 to 2018 before being demoted to two stars in 2019. In a 2013 review, food writer Elizabeth Auerbach declared that Barbot "belongs to the small but illustrious group of French chefs who have a truly international profile and are thus the ambassadors of modern French cuisine."[1]
Career
After his graduation from the hotel school of Vichy, Barbot began his cooking career at the Buron de Chaudefour in Chambon-sur-Lac, Puy-de-Dôme. He then went to Clermont-Ferrand and London at the restaurant Saveurs of Joël Antunes. In 1993, he did his national service in the Navy in New Caledonia, where he became the chef to the Pacific admiral.[2]
